EASY BAKED OATS RECIPE

This delicious basic Easy Baked Oats recipe is the perfect healthy breakfast dish. A no stir porridge, or baked porridge, is Slimming World plan friendly, and easy to make ahead. Serve with juicy raspberries and blueberries!

Oh good morning new favourite breakfast!
I often made baked oats when following the Slimming World plan, but hadn’t made them for a while.
The Naturally Good Challenge I’ve been trying for St Helen’s Farm and the chilly weather spurred me on to make them again. (Read more about the start of my swap from cows’ milk products to goats’ milk here on my Easy Flatbreads recipe post.)
But first my swap. I’ve swapped my regular cows’ milk products for goats’ milk for two weeks.

HOW DO YOU COOK BAKED OATS?

This easy baked oats recipe is super simple, perfect for winter mornings.
Firstly you mix yoghurt, oats, the egg and vanilla extract together, add in the berries of your choice, pop into an over proof dish and bake for 30 minutes. Once cooked you can top with more yoghurt, berries and a drizzle of honey. A great way to start the day.
I obviously made and topped mine with goats’ yoghurt, I think this really keeps the baked oats light and fluffy and adds a delicious tang.

CAN BAKED OATS BE REHEATED?

I often make a big batch of baked oats, keep in the fridge and enjoy every day for a week. To reheat pop them in the microwave and heat until they are hot throughout.

CAN YOU EAT BAKED OATS COLD?

This baked oats recipe is so easy you can make plenty in advance, bake in the morning or simply eat cold. For those super organised people you can even make, bake and freeze!

CAN YOU COOK BAKED OATS IN THE MICROWAVE?

If you are short on time you can put the baked oats mixture into a microwave safe mug or dish coated with a small amount of cooking spray and cook for around five minutes until hot throughout.

TIPS FOR MAKING BAKED OATS:

  • Try not to overcook the baked oats as they become dry.
  • I have used goats’ milk yoghurt but you can substitute this for any type of yoghurt.

  • You can use frozen or fresh berries for the recipe.
  • You can swap the mixed berries for other fruits and nuts. Apple, raisin and cinnamon and banana, almond and honey are favourites in our house.

  • I love serving things like this in cute little ramekins, miniature bake wear is a fetish of mine, these ones from Amazon look perfect.
  • If you are following the Slimming World plan, be sure to use a syn free yoghurt and either count the syns for cooked fruit or omit the cooked fruit.
